Shopping list:
- 200 grams of shrimp
- 200 grams of any seafood
- 1 chorizio
- 2 cups of paella rice
- 1 red pepper
- 1 red onion
- 2 cloves of garlic
- 2 raspberry tomatoes
- 3 tablespoons of tomato puree
- 2 tablespoons of oil
- 1 liter of vegetable broth
- 1 baguette vegan butter with garlic
- rosemary
- salt
- pepper
- turmeric
- sweet pepper
- chili
- smoked paprika
- a bunch of fresh coriander
A method of preparing:
- In a frying pan, fry finely chopped chorizo sausage with garlic and onion in oil, add diced peppers and tomatoes. Sauté until peppers and tomatoes soften.
- Add the uncooked rice and pour the broth over the whole thing. Cook over low heat until the rice absorbs all the broth. Repeat the process until the rice is tender.
- When the rice is al dente, add the seafood, tomato puree and all the spices and mix it one last time. Cover the pan with aluminum foil and let the paella cook under the lid.
Croutons
Meanwhile, cut the baguette, spread each slice with vegan butter and sprinkle with rosemary. Place the baguette in the oven and bake until the croutons are browned.
Sprinkle the finished paella with fresh coriander and serve with croutons.
